the most delicious pie recipe

This is my absolute favorite dessert, especially for my birthday. If you ever want to surprise me with something, this would surely put your name at the top of my favorite people list. (In case you were wondering.)

Cream Cheese Pie*

Crust
1 pack (minus 2 pieces) graham crackers
1/4 cup sugar
6 TBS butter (add a little more butter if you like it uber-moist)

Finely crush graham crackers with a rolling pin. Add sugar. Then mix in melted butter. Press firmly into a pie pan. Cover with plastic wrap and refridgerate for at least a few hours. (I like to leave it overnight; but if you're in a hurry, stick it in the freezer for an hour or so.)

Pie Filling
8 oz cream cheese
1 can sweetened condensed milk
1/3 cup lemon juice
1 tsp vanilla

Soften the cream cheese, then mix all ingredients together until creamy. Pour into a bowl and refrigerate a few hours or overnight.

Pour the cream cheese pie filling into the crust and chill for another hour.

Top with your favorite fresh fruit (a mix of strawberries and raspberries is my favorite) or canned pie filling (cherry is really yummy). Add the fruit when you are ready to serve.

* I totally stole the typed text from my sister's post because I am lazy. Which is silly, because I have this recipe mostly memorized. Oh well. I did add a few of my own notes.
**Yes, I just used the word "totally." I am nearly 30 and I still use "like" a lot, too. This is bad, but I can't break the habit.
